So, I feel like I had to call this recipe “Perfect, Chewy Granola Bars” because this isn’t my first granola bar recipe. While this isn’t my first granola bar recipe, this is mybest granola bar recipe! I’m so excited to have perfected my previous chewy granola bar recipe!

The last chewy granola bar recipe I made tasted really good, but it wasn’t perfect. The bars have to be refrigerated and they fall apart easily when warm.

This recipe though…I want to shout to the rooftops!!!…”This is it! I have done it!….This recipe is perfect! This is the best granola bar recipe!!”

(Okay, I admit, it mayn’t be perfect to the die-hard health foodies out there. It does have a bit of brown sugar in it. I’ll keep experimenting to see if I can come up with a no-sugar-added granola bar that has a good consistency.)

Since I made these almost two weeks ago, my three boys have eaten one almost every day. My two school-aged boys take them to school in their lunches. They are such a great source of fiber, protein, and omega fatty acids.

The Best Granola Bar Recipe!

Perfect Chewy Granola Bars

Ingredients

  • 4 C oats
  • 1 C quinoa flakes (see my blog post for more info on where to find these)
  • 1 C oat flour
  • 1 C raw sunflower seeds
  • 3/4 C milled flaxseed
  • 1 tsp salt
  • 1/2 C shredded (unsweetened) coconut
  • 1 1/2 C dried cranberries
  • (optional) 1/2 C white chocolate chips
  • 6 tbsp coconut oil
  • 1 C + 2 tbsp raw honey
  • 3/4 C brown sugar

Instructions

  • Preheat oven to 350°.
  • Combine all the dry ingredients in a large mixing bowl. Stir to combine. (Note: the white chocolate chips will not hold their shape when you add the microwaved liquid in. They will melt and act as a sweetener for the granola bars.)
  • Combine the coconut oil, honey, and brown sugar in a microwave safe bowl. Microwave on high for two minutes. Remove and stir. Microwave for 2 more minutes, watching carefully that the mixture doesn't boil over the bowl.
  • Pour the oil, honey, and sugar mixture into the large bowl with the dry ingredients. Stir well to combine.
  • Line a jelly roll pan with parchment paper (the parchment paper is very important, don't skip it), and pour your granola mixture into the pan.
  • Spread the granola out evenly on the pan. Then cover the granola with a separate sheet of parchment.
  • Next, you're going to need to flatten the granola down. It is helpful to find something heavy with a flat bottom. I used a heavy glass pitcher. Using the pitcher I pressed the granola mixture until it was uniformly flat (with my parchment paper between the pitcher and the sticky granola).
  • Remove the top layer of parchment and bake in the oven at 350° for 18 minutes.
  • Remove from the oven and let cool for 10-30 minutes before placing in the refrigerator for an additional 10 minutes (this will ensure they don't crumble when you cut them).
  • After the granola bars are sufficiently cool you can cut them into squares or long bars.

Notes

I find it easiest to cut the granola bars with a pizza cutter.I individually wrapped these in snack bags so my boys could grab them for school lunches. The granola bars will keep on the counter for a couple weeks.
