This Mississippi pot roast recipe not only fits into this category, but it’ll also melt in your mouth! We also love that it pairs well with vegetables (even if they are starchy ones!).

What’s a Mississippi Pot Roast?

I think we’ve all experienced a “throw it in a pot and see what happens” kind of recipe before. For me, that was my mom’s goulash. When we were out of true dinner groceries, she’d take soups, fresh vegetables and even ketchup to make a meal for us.

While a Mississippi Pot Roast isn’t as varied, I can totally see it originating the same way.

The reason is because it blends 5 ingredients together that usually wouldn’t go in the same recipe.

The 5 ingredients in a traditional Mississippi pot roast recipe are:

  • one packet of ranch seasoning
  • one packet of au jus gravy mix
  • two or more jarred pepperoncini
  • a full stick of butter
  • 3- to 5-pound chuck roast.

Now if you’re like me, you might not know what pepperoncini are. If you’ve ever had Papa John’s pizza or In-n-Out’s peppers – this is them!

You’ll also notice our recipe is a little different because we didn’t use butter and added in vegetables.

What Kind of Meat Should You Use for a Mississippi Roast Crockpot Recipe?

The original recipe called for a chuck roast; however, you can also use sirloin tip, or rump roast.

What to Serve with Mississippi Roast

We love that you can throw in fresh potatoes, carrots, onion, and celery in the crockpot with your Mississippi Roast!

Usually that’s our whole meal. We will either shred the roast or eat it in chunks with the vegetables as our side.

You could also add in a lean, green vegetable like broccoli or serve rolls and a side salad.

What if I Want to do This Mississippi Roast Recipe Low Carb?

The roast itself is low-carb. So you’d just want to skip the carrots and potatoes since they aren’t the best veggies for a keto or low-carb diet.

You could cook the roast the same way in the crockpot and serve with cheese or over mashed cauliflower.

Simple Crockpot Mississippi Roast Recipe

This crockpot Mississippi Roast with potatoes and fresh vegetables will melt in your mouth! This pot roast is sure to become a family favorite because it's so delicious and easy to make!

Ingredients

  • 3-4 lbs organic grass-fed top round roast
  • 1 Packet Simply Organic Ranch Dip Packet
  • 13.5 oz Imagine Organic Savory Beef Gravy
  • 1/2 cup jarred sliced pepperoncini + ¼ cup juice from the jar
  • 40 oz fresh stew vegetables
  • 1/3 cup I Can’t Believe It’s Not Butter (or another low-fat buttery spread)
  • Salt and pepper

Instructions

  1. Turn slow cooker on high.
  2. Place stew vegetables at the bottom of the slow cooker.
  3. Place roast on top of the vegetables.
  4. Sprinkle roast with ranch dip packet, pour in gravy, place butter on top of the roast, and lightly press it down on to the meat.
  5. Lastly, pour in pepperoncini juice and sprinkle peppers over everything.
  6. Cook on high for 6-8 hours. Serve warm.
